The olive oil Massimo Bottura puts on his own table. Villa Manodori is the chef of Osteria Francescana's pantry line, started in 1995 with his balsamic, and this is the extra virgin: Moraiolo and Leccino olives, hand-picked and cold-pressed, with the green-tomato flavor of a good Tuscan oil and less of the sting.
Bruschetta, a salad, a bowl of white beans, the last pour over pasta. Made to go with the Villa Manodori balsamic. Try it beside the Trampetti from Umbria. More pantry.
