A single-variety Moraiolo oil from Trevi, in the Umbrian hills between Spoleto and Assisi. The Trampetti family has farmed these groves for close to a hundred years; the oil is organic, green and herbal, with green apple, a little bitterness and the pepper at the back of the throat that tells you it is fresh.

A finishing oil. Burrata, a plate of beans, grilled bread, raw vegetables. Keep the cooking oil for cooking. 500 ml. Taste it against the Villa Manodori. More oils and vinegars.
