Raw New Mexico honey with toasted Hatch red chile stirred in. Los Poblanos, the lavender farm and inn outside Albuquerque, works with beekeepers from Taos to Las Cruces, so the honey changes color with the wildflowers, and the chile gives it a slow, smoky heat that arrives after the sweetness.
Over goat cheese, fried chicken, cornbread, a pizza with pesto, or a cheese board with the Italian thousand flower honey beside it. Unpasteurized, no added sugar. More pantry.
