As the summer heat and humidity accelerates, we long for more refreshing foods. This salad highlights the seasonal flavors of summer with natural sweetness and flavor, accentuated by the refreshing flavor of fresh mint. Serve this salad on its on as a refreshing side or salsa, or add grilled shrimp, fish or chicken for a heartier light meal.
1 cup diced watermelon
1 white or yellow peach, diced
1 cup diced sugar snap peas
1 Tablespoon Bella Cucina Mint & Pistachio Pesto
zest and juice of 1 orange
1 Tablespoon red wine vinegar
3 Tablespoons Bella Cucina extra virgin olive oil
1 teaspoon Bella Cucina Peperoncini & Pink Peppercorn Salt
Place the watermelon, peach and sugar snap peas in a bowl. In a smaller bowl, combine the pesto, orange zest and juice and vinegar. Mix well. Whisk in the olive oil. When ready to serve, pour the vinaigrette over the chopped salad. Toss until well coated.
