Spicy Cucumber Lime Cooler

When the heat and humidity has taken its toll and you need a refreshing pick me up, this healthy drink is just the thing. (And when you finish the cleanse, you can add a bit of tequila and you have a clean drink!)

SHOPPING LIST: ⁠

1 persian cucumber
1/2 cup fresh squeezed lime juice
2 sprigs mint
1 Teaspoon Bella Cucina Peperoncini & Pimenton Salt
Club soda

⁠PREPARATION:

Cut 6 thin slices from the cucumber and reserve for garnish. Chop the rest of the cucumber into 1 inch dice and place in blender with the lime juice, 1/2 cup water and mint leaves.

Puree until smooth.  Strain.

On a plate or shallow bowl, dip the rim of the glass in water or lime juice. Coat with the salt. Place a few of the cucumber slices into a glass filled with ice. Fill half of the glass with the cucumber lime juice. Fill the remainder of glass with club soda. Cheers!
