The matcha from Bellocq, the Brooklyn tea atelier. Hibari, the skylark that sings in spring, is first-flush tencha from Uji, the ancestral home of matcha, ground by a family who have made it since the sixteenth century. Smooth, medium-bodied, with the fresh, delicate taste of new grass.

Whisk half a teaspoon with a little cold water, then four ounces of hot. Thirty grams, sealed. Pairs with the Bellocq caddy and a Charlotte Smith cup, with the Dried Cherry and Almond Biscotti on the side. Find more in tea and coffee. More wellness.

How to prepare

Serve: Sift 1/2 teaspoon into a bowl, add a splash of cold water and whisk to a paste, then whisk in 4 to 5 oz water at 160 F
Note: Usucha-style blend of Samidori, Yabukita and Ujihikari cultivars
