Sweet-bitter orange marmalade from Les Moulins Mahjoub, the Tunisian family farm in Tebourba that quietly makes some of the best preserves on the Mediterranean. The bitter oranges are cooked in their own juice with cane sugar and a slow hand. The slices are kept whole.
Sharp at the edges, deep in the middle. A marmalade for people who actually like marmalade.
