Spaghetti from Monograno Felicetti, the small Trentino pasta house that has been working with single-grain wheats and slow drying in the Italian Alps since 1908. This line is made from Matt, an ancient Khorasan grain that holds bite the way modern wheats do not.

Bronze-extruded, slow-dried, organic. The texture is rough on the tooth and good for clinging sauce.

Ways to enjoy

  • Cacio e pepe, with nothing more than the pasta water, sharp pecorino, and cracked black pepper.
  • With raw tomatoes, garlic, anchovy, and a long, slow pour of good olive oil.
