Gluten-free pasta that cooks like the real thing, because it comes from Gragnano, the town above Naples that has made pasta for centuries. La Fabbrica della Pasta uses corn, rice and Gragnano water, nothing else, pushes it through bronze dies and dries it slowly in a separate gluten-free facility. Firm, rough, holds sauce.
