Garlic, the way it tastes roasted, in a bottle. Flamingo Estate presses Coratina olives from Ojai, California, cold and unfiltered, and infuses the oil with artichoke garlic. Robust, peppery, buttery with garlic at the finish, and a limited harvest, so it comes and goes.

Over roast chicken, white beans, a hearty salad, or Bella Cucina Bucatini Pasta with nothing but parmesan. Sixteen ounces. Sits next to the spicy oil on the Flamingo shelf. More oils and vinegars.
