The tester jar of our Roasted Eggplant Pesto, for the sampling table. Fire-roasted eggplant, sun-dried tomatoes, garlic and Italian herbs, the Mediterranean in a spoon. Customers toss it with cordelle pasta, layer it on grilled sandwiches, or scoop it with our dipping crackers.
