Chai the way a Brooklyn kitchen makes it: fresh ginger, cinnamon, green cardamom, clove and black pepper simmered with organic black tea and a little molasses. Dona brews it in small batches in Flatbush, and it tastes like someone made it for you, because someone did.
Mix one part concentrate with one part hot milk, or pour over ice. Eight ounces makes about four cups; sixteen makes eight. Pairs with the Dolci Nocciola on toast. More tea and coffee.
