Tempus Fugit Cocktail Cherries follow a recipe from the 1890s: whole cherries candied slowly in a syrup of cherry juice, pure cane sugar, herbs and spices, with a small measure of Kirsch. The result is dark, firm and layered, nothing like the neon version. One drops into a Manhattan or an Old Fashioned and finishes it. A spoonful of the syrup is worth saving for sparkling water or vanilla gelato.

8 oz / 225 g jar. Preserved with Kirsch, so the jar contains alcohol: keep it for the grown-ups. Refrigerate after opening. Set it beside the Jack Rudy bourbon cherries, with Bella's Olive Oil Dipping Crackers and Olivada Olive Pesto for the table. More cocktails, mocktails and mixers.
