Egg pasta from Cipriani, the Venetian family behind Harry's Bar, made in Italy. Rolled extraordinarily thin, so it cooks in two to three minutes and takes a sauce lightly. Three cuts: Classica Tagliarelle, Egg Pappardelle and Spinach Tagliarelle.
Boil in plenty of salted water for two to three minutes, then toss with butter and Parmigiano, a light ragù or fresh tomato. Store in a cool, dry pantry. Choose your cut above. More in Pasta, Pizza & Sauces.
