Celebrating the flavors of the season, this wine poached dessert is simple to make, but elegant enough to serve for entertaining. We love using whatever fruit is in season for the most vibrant colors and flavor.
SHOPPING LIST:
6 ripe pears, such as red barlett or d'anjou
1/2 cup of water
1 cup Lambrusco Red Wine or Non-Alcoholic Tost Rose
1/4 Cup Bella Cucina Lambrusco Organic Red Wine Vinegar
2 Strips of lemon peel
2 Tablespoons Bella Cucina Wildflower Sugar
1 vanilla bean, split
PREPARATION:
In a large saucepan or heavy bottom dutch oven, add the water, wine, vinegar, lemon, sugar and vanilla bean. Bring the mixture to a light boil, then turn down the heat to medium low, add the pears, top with a lid and simmer over low heat and cook for 30-45 minutes, or, depending on size, until pears pierce easily with a fork. Serve warm, room temperature or cold with a dollop of Bella Cucina Preserved Lemon Cream.
