
Italian Chickpea Soup
A quick and comforting soup that keeps you warm in winter, but light enough to enjoy all year round. Keep the essential ingredients in your pantry so you can put this dish together in no time, especially good when there is seemingly "nothing to eat."
SHOPPING LIST:
3 Tablespoons Bella Cucina Extra Virgin Olive Oil
2 Slices applewood smoked bacon, chopped finely
1 yellow onion, chopped
1 teaspoon Bella Cucina Wild Oregano & Sage Salt
2 stalks celery, chopped
2 medium carrots, chopped
2 Tablespoons Italian parsley leaves, chopped
1 teaspoon ground cumin
1- 6 ounce jar Bella Cucina Garlic & Lemon Chickpeas
4 cups chicken or vegetable broth
2 Tablespoons Bella Cucina Spinach Artichoke Bruschetta
PREPARATION:
In a large saucepan, heat 2 Tablespoons of the olive oil and add the bacon, onion and salt. Cook over medium high heat until the onion is soft, about 5-7 minutes. Add the carrots, celery, parsley and cumin. Cook for an additional 4-5 minutes. Add the chick peas and broth and cook, covered, for 30-45 minutes to let the flavor develop. Ladle soup into bowls and top with a Tablespoon of the Spinach Artichoke.
