Garden to Table | An Italian Spring

To eat is not just to nourish the body. It is to participate in the ritual of life.

To take part in a cycle that begins long before a kitchen, before a recipe, before a table is set. It begins in the soil, in the tending of land, in the patience of seasons, in the unseen labor of many hands. When we pause long enough to consider this, even briefly, something shifts. A meal becomes a ritual of reverence. It becomes a relationship. With the farmers who grow and harvest. With those who we share our meals at the table. With the art of living itself. 

In Italy, the relationship between the garden and the table has never been a philosophy. It is simply the order of things. You grow it, you pick it, you cook it. The meal follows the season, not the other way around. There is a kind of freedom in that, in letting the garden, the season,  decide what you'll be cooking and eating today. 

We have been thinking about this at Bella Cucina. About what it means to cook and eat with intention. To choose what is freshest, what is most alive. To visit the farmers market not as an errand but as a ritual, a quiet act of choosing beauty and nourishment over convenience.

April invites us back to that ritual. Back to the table.

This Month's Recipe

Spring Pea & Minted Cottage Cheese Crostata

This is the kind of recipe the season calls for. Simple, seasonal, made from things you likely already have. Puff pastry layered with cottage cheese, Bella Cucina Mint & Pistachio Pesto, Parmesan, and a handful of bright spring peas, all baked until golden. Serve it warm as a first course, at room temperature as part of a platter, or cut into small squares with a glass of chilled white wine. It disappears quickly. Make two.

Substitute the peas with whatever the market has that morning. Fresh fava beans. Asparagus. That is the whole point.

By request, we are back at the table, this time with dough in our hands.

Our Garden to Table Pizza by Hand Class returns on Thursday, April 22nd. An evening of making something from scratch: fresh dough, shaped by hand, topped with Bella Cucina pantry provisions and garden-grown seasonal ingredients. Light bites and chilled bubbly will be served. Seats are limited and they will go.

This Month's Garden to Table

We gathered this month's collection the way you'd gather ingredients at the market — with an eye for what is most alive, most purposeful, most worth bringing home.

The Garden to Table Basket holds everything you need for a spring table: Cordelle pasta, Artichoke Lemon Pesto Grande, Fresh Basil Pesto, our Organic California Extra Virgin Olive Oil, Bella's Olive Oil Dipping Crackers, and an olive wood pasta serving set, tucked together in the picnic hamper, made for sharing.

 

 

The Bottle Vases belong on any table this month. Deep green glass, generous in form, made for a single stem cut from the garden or a branch brought in from the farmers market.

And Fridays from the Garden by Flamingo Estate is the book we keep open on the counter all month. Part cookbook, part love letter to the land. Every page feels like an open window in April.

Mother's Day falls on May 10th this year. The table has always been the right place to say thank you, to the women who first taught us to love the kitchen, to slow down, to cook with care.
