When you’re up early for meetings, after a morning run, or need a high protein healthy snack, one of our favorite go-to snacks to make and keep on hand is not-too hard boiled eggs. Cooking in boiling water for exactly nine minutes makes what we think it the perfect egg.
In a pot filled with ample water, heat over medium heat. When the water is boiling, carefully drop in the eggs. Set a timer and cook for exactly six minutes, then plunge into ice cold water and leave them for two more minutes. When cooled enough to handle, peel the shells. Cut in half, generously sprinkle with the salt, and drizzle with the olive oil.
