SHOPPING LIST:
2 cups Persian cucumbers, about four2 cups seedless watermelon, cubed
1 cup sheep's milk feta cheese, cubed
4 ounces Bella Cucina Mint & Pistachio Pesto
1/4 cup toasted pistachios, chopped
fresh mint leaves, optional
PREPARATION:
Using a mallet, smash cucumbers until they are slightly flattened. Slice down the middle lengthwise and horizontally into 1/2 inch pieces.
Transfer cucumber, watermelon, and feta to a bowl and toss with Bella cucina Mint & Pistachio Pesto to combine.
Garnish with fresh mint leaves and chopped pistachios.
