
Savory Golden Pepper Pesto Broccolini Tart
An easy to make appetizer, side dish or savory snack with a few Bella Cucina pantry provisions and ingredients you probably have on hand. Substitute the broccolini with your favorite farmer's market vegetable. So simple, you'll want to keep it on your seasonal recipe rotation.
SHOPPING LIST:
1 bunch broccolini
1 sheet puff pastry
1 whole egg
1 cup ricotta cheese
1/2 cup Bella Cucina Golden Pepper Pesto
1/4 cup + 2 Tablespoons Parmesan Cheese
1 teaspoon Bella Cucina Calendula & Chive Savory Salt
1 Tablespoon Bella Cucina Extra Virgin Olive Oil
PREPARATION: Preheat oven to 425 degrees
Remove any tough ends from the broccolini and disgard. If there are blossoms, remove and reserve. Blanch the broccolini in boiling salted water for 30 seconds. Remove from the water and place into a bowl of ice cold water to stop the cooking and retain the vibrant color. Drain on paper towels and remove any excess water.
Roll out the pastry and place on a parchment lined sheet pan. With a knife, score 1/2 inch border each side of the pastry. Keep chilled until ready to assemble and bake. Place the egg in a large bowl and whisk with a fork. With a pastry brush, lightly brush the scored border edges with egg wash. This will give the pastry a nice golden brown color.
In at the same mixing bowl with the remaining egg, combine the cheese, pesto, 1/4 cup of Parmesan and salt. Mix until well blended. Spoon the mixture onto the puff pastry and spread evenly to the scored edges. Top with the broccolini and sprinkle the remaining 2 Tablespoons of Parmesan cheese. Drizzle with olive oil. Bake for 30-35 minutes, until the pastry is golden and the filling is puffy and golden brown. Cool slightly and cut, or serve at room temperature.
