
Piccolo Tomato Caprese Salad
A super simple recipe that sings of summer and can be enjoyed anytime of the year. Our Piccolo Pomodoro Tomatoes are picked and packed at the peak of ripeness, then marinated in extra virgin olive oil, white balsamic and fresh basil leaves which gives the salad its depth of flavor.
SHOPPING LIST:
6 ounces ciliegie (cherry size) mozzarella balls
1- 6 ounce jar Bella Cucina Piccolo Pomodoro Tomatoes Antipasti
A handful of fresh basil leaves
PREPARATION:
You can prepare this on one large platter, or plate individually if serving as a coursed salad.
Cut the mozzarella balls in half and scatter on the platter. If using a large ball of mozzarella, you can slice a 1/4 inch thick and layer along the platter.
Spoon the tomatoes over the mozzarella and drizzle the marinade from the jar over the tomatoes.
Finish with torn basil leaves.
VARIATION:
- Add cubes of baked Focaccia bread for a simple Panzanella Salad
- Layer with slices of prosciutto
- Add roasted or grilled chicken
