This recipe, adapted from Danny Seo's version is as easy as it gets. Piccolo pasta is tossed with our prepared onion antipasti, raisins, and briny olives to yield a light lunch or side that is full of flavor without a lot of fuss.
SHOPPING LIST:
1 cup Bella Cucina Pearl Pasta or orzo2 Tbsp Bella Cucina Extra Virgin Olive Oil
1 jar Bella Cucina Caramelized Onion & Raisin Antipasti
1/2 cup green or Kalamata olives, chopped
1/2 cup Italian flat-leaf parsley, chopped
1/2 cup Parmigiano-Reggiano shavingsFresh ground black pepper and salt, to taste
PREPARATION:
In a large pot, bring 4 quarts of salted water to a boil. Add the pearl pasta and cook until al dente, about 12 minutes. Toss with 2 Tbsp Bella Cucina Extra Virgin Olive Oil to prevent sticking.
Toss with Bella Cucina Caramelized Onion & Raisin Antipasti, olives, parsley, and Parmigiano-Reggiano. Season with salt and ground pepper to taste.
