Pumpkin Mac'n Cheese embodies all of the cozy feels of fall. Enjoy the rich, creamy pasta and cheese as a side or alongside Bella's Roasted Porchetta for a fall feast that celebrates the season.
SHOPPING LIST:
4 Tablespoons unsalted butter
1/2 cup all purpose flour
2 cups whole milk
1 pound Bella Cucina Cordelle pasta, cooked
8 ounces white cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
1 - 6 ounce jar Bella Cucina Sweet Pumpkin Pesto
For the topping:
1 cup panko bread crumbs1/3 cup Bella Cucina Extra Virgin Olive Oil
1 teaspoon Bella Cucina Wild Oregano & Sage salt
PREPARATION:
In a medium saucepan, melt the butter and whisk in the flour until heated through. Gradually add the whole milk, half of a cup at a time, stirring continuously until a smooth sauce is formed. Remove from heat and stir in Bella Cucina Sweet Pumpkin Pesto. Toss with warm Cordelle Pasta and both cheeses.
For the topping:
Heat Bella Cucina Extra Virgin Olive Oil over medium heat. Add panko bread crumbs and toast, stirring continuously, until browned. Season with Bella Cucina Wild Oregano & Sage salt.
Top macaroni and cheese with toasted panko topping and serve.
