Some sandwiches are worth the fork and knife, and this is one of them. Focaccia, grilled chicken, and two of our pestos doing the quiet work in between. A summer lunch, or the center of a table set for friends.
SHOPPING LIST:
1 recipe Bella Cucina Tradizionale Pizza & Focaccia Dough (prepared according to package instructions)
4 grilled chicken breasts
3 ounces Bella Cucina Sun-Dried Tomato Pesto
3 ounces Bella Cucina Basil Pesto
8 ounces sliced mozzarella or crumbled goat cheese
Arugula or lettuce
PREPARATION:
Prepare the focaccia dough according to the package instructions. Let cool, then slice horizontally through the center to create two large rectangular slices.
Spread one side with a generous layer of Sun-Dried Tomato Pesto and the other with a layer of Basil Pesto.
Layer the grilled chicken breasts, arugula, and cheese on the bottom slice of focaccia and top with the remaining bread. Cut into squares and serve.
