
Golden Pepper Basted Eggs with Calendula & Chive
A light, healthy and colorful breakfast or quick high protein dinner with a side salad. Almost effortless, perfect for feeding a family on the go or as a beautiful brunch main course.
SHOPPING LIST:
1 - 6 ounce jar Bella Cucina Golden Pepper Pesto
4 organic eggs
1 teaspoon Bella Cucina Calendula & Chive Salt
2 Tablespoons Bella Cucina Extra Virgin Olive Oil
Fresh parsley leaves
PREPARATION:
Warm a 9 inch saute pan over medium heat and add Golden Pepper Pesto to cover bottom of pan. Crack eggs one at a time into sauce. Season with salt. Cook, covered, until eggs are done to your liking, about 2-4 minutes. Drizzle with olive oil and garnish with parsley leaves.. Serve warm from the pan or serve on individual plates. You can also cook in individual ramekins in a water bath in the oven.
