This is a simple, comforting upside-down style cake with a tender crumb and a sweet-tart flavor the Bella Cucina Cranberry Applesauce. A favorite winter dessert or weekend breakfast sweet, enjoyed anytime of the year, served warm or room temperature with a dollop of whipped or ice cream.
SHOPPING LIST :
For the base:
3 Tablespoons unsalted butter
1/3 cup brown sugar
1-1/2 cups Bella Cucina Cranberry Applesauce
For the batter:
8 Tablespoons (1 stick) unsalted butter
3/4 cups sugar
1 teaspoon pure vanilla extract or 1 vanilla bean, split and pods removed
2 eggs, separated
1-1/2 cups all purpose flour
2 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon kosher salt
2/3 cup milk
1 Tablespoon Bella Cucina Wildlfower Sugar for garnish, optional
PREPARATION: Preheat oven to 350 degrees F.
To Prepare the base:
Heat the butter in a 9 inch round baking pan over medium low heat. Add the sugar and continue to cook, while stirring, just until sugar is melted.
Spoon in the Cranberry Apple sauce.
To Make the Batter:
Cream the butter and the sugar until light and fluffy. Add the vanilla, then the egg yolks one at a time. Mix together the dry ingredients, then slowly add to the butter and sugar mixture, alternating it with the milk.
In a separate bowl, beat the egg whites until stiff. Gently fold the egg whites into the batter mixture. Pour the batter over the cranberry and spread evenly.
Bake in the oven for about 1 hour, or until a skewer or knife inserted into middle of cake comes out clean. Let the cake rest 15 minutes before unmolding onto plate or platter. Must be unmolded while still hot so it comes out of pan clean.
Before serving, sprinkle with Wildflower sugar. Serve as is or with whipped cream or a Tablespoon dollop of mascarpone.
