
Bella's Caprese Summer Focaccia Sandwich
There are days when the kitchen feels like a sanctuary of simple pleasures. A sandwich that tastes like summer. A perfect companion to tuck into a picnic basket, take to the pool, or eat sea side with a Caramelized Onion Potato Watercress Salad side.
INGREDIENTS:
1 mix Bella Cucina Focaccia Dough Bread ( an 8 X 12 loaf if you're buying from the bakery )
1 cup of home-made or mayonnaise of your liking
1 heaping Tablespoon of Bella Cucina Fresh Basil Pesto
1 - 8 ounce ball of buffalo mozzarella
1 - 6 ounce jar of Bella Cucina Piccolo Pomodoro Tomatoes
PREPARATION:
Make focaccia according to directions. When focaccia is cooled, slice in half horizontally so you have two long pieces (a top and bottom) for the sandwiches.
In a small bowl, mix together the mayonnaise and basil pesto until smooth. Divide in half and spoon evenly over each inner side of the bread.
Tear the mozzarella apart and layer on the bottom half of the bread, then spoon the Piccolo Pomodoro Tomatoes over the mozzarella. Drizzle a bit of marinade over the tomatoes, reserving the rest for another use. Finish with a handful of fresh arugula or micro-greens, and place the focaccia on top and slice into 4 rectangle or 8 square sandwiches.
Serve immediately or pack for a picnic.
