Arugula, Fresh Milk Mozzarella and Prosciutto Panini

We're in love a good panini sandwich and this one checks all the boxes for the perfect picnic lunch.  Substantial, but light with bright flavors that can be enjoyed anytime of the year. 


1 loaf Italian ciabatta or baguette 
4 Tablespoons Bella Cucina Arugula Pesto 
8 oz. Fresh milk mozzarella cheese, sliced  
1/2 teaspoon Bella Cucina Wild Oregano & Sage Salt   
2 Tablespoons Bella Cucina Extra Virgin Olive Oil                                                                                                                                                                                                      
8 slices prosciutto ham
A healthy handful of arugula lettuce leaves


Slice the bread in half horizontally, so you have two long pieces. Spread the arugula pesto on the bottom half of the bread. Brush the top half of the bread with the olive oil and sprinkle with the salt. 

Layer the sliced mozzarella on the bread with the arugula pesto. Sprinkle the salt evenly over the mozzarella. Add a layer of prosciutto slices, then add the arugula lettuce leaves. Top with the oiled bread.  Slice into four panini sandwiches. 

If transporting, wrap in parchment paper and tie with butcher string. 

Serves 4
