
A Classic Tomato Sandwich
A classic tomato sandwich is personal. Depending on where you live, or where you grew up, the tomato sandwich can have a very specific "classic" version. We are purists at heart who also love a good Bella Cucina riff. However you enjoy your classic tomato sandwich, here's our version of the moment, perhaps a bit of new inspiration.
SHOPPING LIST:
2 slices of sandwich bread, we love a good buttery brioche
1 perfectly ripe summer tomato, sliced to your liking
2 Tablespoons good quality (mayonnaise or homemade if your a superstar) We are converts of many years from Hellman's to Duke's (no sugar)
1 teaspoon Fresh Basil Pesto * optional
Pinch of Wild Oregano & Sage salt
PREPARATION:
Slice the bread thick enough to hold the juiciness of the tomatoes, but not so thick it overpowers the tomatoes. Toast it lightly if you like a bit of crunch, or keep it soft for the most traditional version.
In a small bowl, mix the mayonnaise with the pesto, or keep it pure and plain.
Slather the mayonnaise edge to edge on each slice of bread. Place slices of tomatoes on one piece of the bread. Season with salt. Place the second slice on the sandwich and eat as is or cut in half.
VARIATIONS:
- Use Arugula Pesto instead of plain or Basil Pesto mayo
- Top the tomatoes arugula greens or a few fresh basil leaves
- Add slices of cooked applewood smoked bacon
